Equipment

  • Electric Hand Mixer
  • Rubber Spatula
  • Measuring Cups
  • Glass Serving Dish

Ingredients

  • 8 ounces cream cheese
  • 1 box lime gelatin 3 ounces
  • 20 ounces crushed pineapple
  • 2 cups cottage cheese
  • 8 ounces whipped topping
  • 1 cup mini marshmallows
  • 1/2 cup chopped pecans

Instructions

Prepare the Base

  • Start by putting soft cream cheese in a bowl. Beat it until it looks very smooth and creamy.

Add the Flavor

  • Pour the lime gelatin powder into the cheese. Mix it well until the color is even green.

Mix the Fruit

  • Add the crushed pineapple with all of its juice. Stir it slowly so the juice mixes in well.

Combine the Cheeses

  • Fold in the cottage cheese with a big spoon. This adds a nice thickness to the sweet mix.

Make it Fluffy

  • Gently add the whipped topping to the bowl. Do not stir too hard or it loses air.

Add the Extras

  • Drop in the marshmallows and the chopped pecans now. Give it one last gentle stir to combine.

Chill the Salad

  • Pour the mix into your favorite glass dish. Put it in the fridge for four hours minimum.

Notes

➔ Drain the pineapple slightly if you want a thicker salad.
➔ Use full-fat cream cheese for the very best flavor.
➔ Make sure the cream cheese is at room temperature.
➔ Fold the whipped topping gently to keep it fluffy.
➔ Let it chill overnight for the best firm texture.
➔ Add a few extra pecans on top for decoration.
