Ingredients
  

  • 4 cups Russet potatoes cubed
  • 3 cups Chicken broth
  • 1/2 cup Yellow onion diced
  • 1/4 cup Unsalted butter
  • 1/4 cup All-purpose flour
  • 2 cups Heavy cream
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Cheddar cheese shredded
  • 1/2 cup Bacon cooked and crumbled
  • 2 tbsp Fresh chives chopped

Instructions
 

Prepare the Vegetables

  • Peel your potatoes first. Cut them into small cubes. Dice the onion into small pieces. This helps them cook fast.

Boil the Potatoes

  • Put potatoes and onion in the pot. Add the chicken broth. Bring the liquid to a boil. Simmer until potatoes are soft.

Make the Thickener

  • Melt butter in a small pan. Whisk in the flour slowly. Cook it for one minute. This creates a thick paste.

Mix the Soup

  • Add the flour paste to the pot. Stir it very well. The soup will start to get thick. Keep the heat on medium.

Add the Dairy
