Equipment

  • Large Mixing Bowl
  • Large Skillet:
  • 9x5 Inch Loaf Pan
  • Small Mixing Bowl:
  • Measuring Cups
  • Measuring Spoons
  • Baking Sheet
  • Kitchen Knife
  • Cutting Board
  • Meat Thermometer

Ingredients

  • Ground Beef: 2 lbs
  • Balsamic Vinegar: 1/2 cup
  • Ketchup: 1/2 cup
  • Breadcrumbs: 1 cup
  • Large Eggs: 2
  • Yellow Onion: 1 medium
  • Celery Stalks: 2
  • Garlic Cloves: 3
  • Fresh Parsley: 1/4 cup
  • Olive Oil: 1 tbsp
  • Salt: 1 tsp
  • Black Pepper: 1/2 tsp
  • Thyme: 1/2 tsp

Instructions

Preheat Your Oven

  • Set your oven to 350 degrees. Let it get nice and hot. This ensures even cooking for the meat.

Sauté The Vegetables

  • Heat olive oil in your large skillet. Add the chopped onions and celery. Cook them until they are soft. Add the garlic at the end. Let the mix cool down for a bit.

Mix The Glaze

  • Grab your small mixing bowl. Combine the ketchup and balsamic vinegar. Add a little bit of sugar if liked. Stir it until the sauce is smooth. Set half of the glaze aside.

Combine The Meat

  • Place ground beef in the large bowl. Add the cooked vegetables to the meat. Pour in the eggs and the breadcrumbs. Add your salt, pepper, and fresh herbs.

Mix Very Gently

  • Use your hands to mix everything. Do not squeeze the meat too hard. Overmixing makes the meatloaf very tough. Keep it light and airy for moisture.

Shape Into A Loaf

  • Press the mixture into the loaf pan. Make sure the top is flat. This helps the glaze stay on top. You can also shape it on a sheet.

Add The First Glaze

  • Brush half of the sauce on top. Spread it all the way to edges. This will bake into the meat. It creates a very deep flavor.

Bake The Meatloaf

  • Place the pan in the hot oven. Bake it for about 45 minutes. The house will start to smell amazing. Check on it every now and then.

Add More Glaze

  • Take the meat out after 45 minutes. Pour the rest of the glaze on. Put it back in for 15 minutes. This makes the top nice and sticky.

Check The Temperature

  • The middle should reach 160 degrees. Use your meat thermometer to be sure. This means the beef is fully cooked. Do not overcook the meatloaf today.

Let It Rest

  • Remove the meatloaf from the oven. Let it sit for ten minutes. This keeps the juices inside the meat. It makes slicing the meat much easier.
