Ingredients
  

  • 1 lb Crawfish tails
  • 1 stick Unsalted butter
  • 1/2 cup All purpose flour
  • 1 cup Chopped yellow onion
  • 1/2 cup Chopped bell pepper
  • 1/2 cup Chopped celery
  • 3 cloves Mince garlic
  • 2 cups Chicken stock
  • 1 tbsp Cajun seasoning
  • 1/2 cup Chopped green onions
  • 1/4 cup Fresh parsley

Instructions
 

Melt the Butter

  • Put the stick of butter in the large pot. Turn the heat to medium. Let the butter melt until it is liquid.

Make the Roux

  • Add the flour to the melted butter. Stir them together with your wooden spoon. This starts the thick base.

Stir for Color

  • Keep stirring the flour and butter constantly. You want it to reach a blonde color. This takes ten minutes.

Add the Vegetables

  • Add the onions, peppers, and celery now. These are your fresh vegetables. Stir them into the roux.

Soften the Veggies

  • Cook the vegetables until they are soft. They should smell very sweet and good. This takes five minutes.

Add the Garlic
