Equipment

  • Large Mixing Bowl
  • Medium Bowl
  • Whisk
  • 9x13 Baking Dish
  • Bread Knife
  • Measuring Cups
  • Measuring Spoons

Ingredients

  • 1 loaf French bread 1 pound
  • 1 can 15 oz Pumpkin puree
  • 2 cups Heavy cream
  • 1 cup Whole milk
  • 4 Large eggs
  • 3/4 cup Brown sugar
  • 1/4 cup White sugar
  • 1 tablespoon Vanilla extract
  • 2 teaspoons Pumpkin pie spice
  • 1/2 cup Chopped pecans
  • 2 tablespoons Butter

Instructions

Prepare the Bread

  • Cut your French bread into small one-inch cubes. Place the cubes into your greased baking dish evenly.

Mix the Custard

  • Whisk the eggs, cream, milk, and pumpkin in a bowl. Add the sugars and spices until the mix is smooth.

Soak the Bread

  • Pour the pumpkin mixture over the bread cubes slowly. Press the bread down so every piece gets wet.

Let it Rest

  • Let the dish sit for about twenty minutes. This helps the bread soak up all the delicious liquid.

Add the Topping

  • Sprinkle the chopped pecans over the top of the bread. You can also add a little extra cinnamon or sugar.

Bake the Pudding

  • Place the dish in a preheated oven at 350 degrees. Bake for forty-five minutes until the center is set.

Cool and Serve

  • Let the pudding cool for ten minutes before slicing. Serve it warm with a scoop of vanilla ice cream.

Notes

➜ Use stale bread so it absorbs more of the liquid.
➜ Do not overbake the pudding or it will become dry.
➜ Always grease your baking dish very well with soft butter.
➜ Whisk the eggs thoroughly to avoid bits of cooked egg.
➜ Add a splash of bourbon for a deeper adult flavor.
➜ Cover with foil if the pecans start to get dark.
➜ Try sourdough bread for a slightly tangy and unique taste.
