Ingredients
  

  • 4 cups russet potatoes peeled and cubed
  • 4 tablespoons unsalted butter
  • 1 small yellow onion diced
  • 1/4 cup all purpose flour
  • 2 cups chicken broth
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon bits
  • 2 tablespoons fresh chives chopped

Instructions
 

Prepare the Potatoes

  • Wash your potatoes in cold water first. Peel off all the brown skin carefully. Cut them into small, even cubes. Small cubes cook much faster than big ones.

Sauté the Onions

  • Place your pot on the stove. Turn the heat to medium. Melt the butter in the pot. Add the chopped onions to the butter. Cook them until they look clear.

Make the Thickener

  • Sprinkle the flour over the butter and onions. Stir it constantly for one minute. This cooks the raw flour taste away. Do not let the flour turn brown.

Add the Liquids
