Ingredients

  • 1/2 cup Unsalted Butter
  • 1 cup Hot Sauce
  • 2 tsp Cayenne Pepper
  • 2 tbsp Jalapeno Brine
  • 1 tsp Red Pepper Flakes
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1/4 tsp Black Pepper

Instructions

Melt the Butter.

  • Start by placing your pan on the stove. Turn the knob to low heat. Add the cold butter to the pan. Let it sit for a minute. The butter will start to melt. It will turn into a yellow liquid. Stir it slowly with your whisk. Do not let the butter brown. You want a bright yellow color. This is the base of your sauce. It will carry all the heat. It makes the sauce very smooth.

Pour in the Liquids.

  • Now it is time for the liquids. Pour the red hot sauce in. Add the salty jalapeno brine next. The mixture will look very bright. Whisk the liquids into the butter. They will combine and look creamy. The smell will be very strong. It might make you sneeze. That means the spice is working. Keep the heat very low. We do not want a boil yet. Just keep stirring the pan.

Add the Dry Spices.

  • Get your spices ready for the pan. Add the cayenne pepper first. This adds the big heat kick. Next, add the garlic powder. It smells wonderful in the heat. Throw in the red pepper flakes. These add a nice look. Add the smoked paprika now. This gives it a deep color. Finally, add the black pepper. Your sauce is now full of flavor. The colors look very rich now.

Whisk and Simmer.

  • Whisk everything together very well. Make sure there are no spice clumps. The sauce should look very smooth. Let it simmer for five minutes. This allows the spices to wake up. They will blend into the butter. The sauce will get a bit thicker. It will coat a spoon nicely. Watch the pan the whole time. You do not want it to burn. Keep the bubbles very small.

Finish and Serve.

  • Turn off the heat on the stove. Let the sauce sit for two minutes. This lets the flavors settle down. It will stay warm for a long time. Pour it over your hot wings. Use a big bowl to toss them. Make sure every wing is red. Your Hooters 911 sauce is ready. Serve them with cold celery. Add some ranch dressing too. Enjoy your spicy meal! You did a great job.
