Ingredients
  

  • 1 lb Smoked Sausage sliced
  • 1 lb Pork Shoulder cubed
  • 3 cups Long Grain Rice
  • 6 cups Beef Broth
  • 1 cup Chopped Onion
  • 1 cup Chopped Bell Pepper
  • 1/2 cup Chopped Celery
  • 2 tbsp Vegetable Oil
  • 1 tbsp Cajun Seasoning
  • 1 tbsp Worcestershire Sauce
  • 3 cloves Garlic minced

Instructions
 

Brown the Meat

  • Heat the oil in your large cast iron pot. Add the pork and sausage to the hot oil. Cook until the meat looks very dark and brown. This step adds the most flavor to your meal.

Sauté the Vegetables

  • Put the onions and peppers into the pot now. Add the celery and the minced garlic as well. Stir them until they are soft and very clear. Do not let the garlic burn in the pot.

Season the Mix

  • Pour in the beef broth and the savory sauce. Add your favorite Cajun spices to the liquid now. Stir everything well so the flavors mix together. Let the liquid reach a very fast boil.

Add the Rice

  • Pour the dry rice into the boiling liquid pot. Stir it once to make sure it is submerged. Lower the heat to a very small flame now. This keeps the rice from burning on the bottom.

Simmer the Pot

  • Put a tight lid on the big heavy pot. Let it cook for twenty five minutes total. Do not lift the lid while it is cooking. The steam cooks the rice until it is fluffy.

Fluff and Serve

  • Turn off the heat after the timer goes off. Let the pot sit for five more minutes. Use a fork to fluff the rice very gently. Serve it hot to your family and friends.
