Ingredients
  

  • 2 cups Vegetable Oil
  • 40 Dried Chile de Arbol Peppers
  • 4 Cloves Fresh Garlic
  • 1/4 cup White Vinegar
  • 1 teaspoon Kosher Salt
  • 1/2 cup Water

Instructions
 

Toast the Red Peppers

  • Put the pan on medium heat. Add the dried peppers. Toss them for two minutes. They should smell very nutty. Do not let them turn black.

Remove the Pepper Stems

  • Let the peppers cool down. Pull off the green stems. You can leave the seeds. Seeds make the sauce very hot. Wear gloves for this part.

Peel the Fresh Garlic

  • Take the skin off the garlic. You do not need to chop it. The blender will do the work. Fresh garlic is very strong.

Combine the Base Ingredients

  • Put peppers in the blender. Add the garlic and vinegar. Pour in the salt. Add a splash of water. Do not add oil yet.

Blend the Pepper Mixture

  • Turn the blender on high. Mix until it is a paste. It should look very red. Make sure no big chunks remain.

Add Oil Very Slowly

  • Keep the blender running. Pour the oil in a thin stream. This is called emulsifying. The sauce will turn orange. It will become very thick.

Adjust the Final Thickness

  • Look at your orange sauce. Add more water if needed. It should pour easily. Taste it with a chip. Add salt if you want.
