  • Chef Knife
  • Cutting Board
  • Measuring Cups
  • Measuring Spoons
  • Cheese Grater
  • Ladle

Ingredients

  • 1/4 cup Unsalted Butter
  • 1/2 cup Yellow Onion
  • 1/4 cup All Purpose Flour
  • 2 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 cups Fresh Broccoli
  • 1 cup Shredded Carrots
  • 2 cups Sharp Cheddar Cheese
  • 1/2 tsp Sea Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Garlic Powder

Instructions

Prep the Fresh Vegetables

  • Wash your broccoli and carrots very well. Cut the broccoli into tiny florets. Chop the onion into very small pieces. Set everything aside in small bowls. This makes the cooking process very fast.

Melt the Unsalted Butter

  • Place your large pot on the stove. Set the heat to a medium level. Add the butter and let it melt. It should bubble but not turn brown. This is the start of your soup.

Sauté the Yellow Onion

  • Add the chopped onions to the hot butter. Stir them around with a spoon. Cook them for about five minutes. They should look clear and feel soft. They will smell very good.

Create the Soup Thickener

  • Sprinkle the flour over the soft onions. Stir the mixture for one full minute. This cooks the flour so it tastes good. It will look like a thick paste now. Do not burn it.

Add the Chicken Broth

  • Pour the chicken broth in very slowly. Whisk the liquid while you are pouring it. This keeps the base very smooth. There should be no flour lumps. The liquid will start to thicken.

Mix in the Broccoli

  • Add the broccoli pieces to the pot. Stir in the shredded carrots now too. Make sure the vegetables are in the liquid. This is how to make McAlister's Deli Broccoli Cheddar Soup.

Simmer Until Very Tender

  • Turn the heat down to a low setting. Put a lid on the large pot. Let it simmer for fifteen minutes. The broccoli must be very soft. You can test it with a fork.

Stir in the Heavy Cream

  • Remove the lid from the pot. Pour the heavy cream into the soup. Stir it gently to combine the colors. The soup will look very light and creamy. It will smell very rich.

Melt the Cheddar Cheese

  • Turn the stove heat off completely. This stops the cheese from getting oily. Add the cheese in small handfuls. Stir until all the cheese is melted. The soup will be thick.

Season and Serve Hot

  • Add your salt and black pepper now. Taste the soup with a small spoon. Add more seasoning if you like it. Ladle the soup into big bowls. Serve it to your family immediately.
