Equipment

  • Large Skillet:
  • Medium Saucepan
  • Whisk
  • Chef Knife
  • Cutting Board
  • Measuring Cups
  • Wooden Spoon:

Ingredients

  • 1 pound Large Shrimp
  • 1 cup Stone Ground Grits
  • 2 cups Chicken Broth
  • 2 cups Water
  • 1/2 pound Andouille Sausage
  • 1 cup Sharp Cheddar Cheese
  • 1/2 cup Heavy Cream
  • 1 Bell Pepper
  • 1 small Onion
  • 2 cloves Garlic
  • 2 tbsp Cajun Seasoning
  • 4 tbsp Butter
  • Salt and pepper to taste

Instructions

Cook The Grits

  • First, boil the broth and water in a pot. Add the grits and stir them very well. Lower the heat and cover the pot tightly. Let them cook until they are very soft. This usually takes about twenty minutes to finish.

Prepare The Shrimp

  • Clean the shrimp and remove the tails first. Season them with the spicy Cajun mix now. Let them sit for a few minutes alone. This helps the flavor soak in very deep. It makes the shrimp taste much better later.

Sauté The Sausage

  • Cut the sausage into small round pieces. Brown them in a large hot skillet now. Use medium heat so they do not burn. Remove them and set them aside for later. Keep the oil in the pan for flavor.

Cook The Vegetables

  • Add the peppers and onions to the pan. Cook them until they are soft and brown. Add the garlic and cook for one minute. The smell will be very wonderful right now. Do not let the garlic turn too dark.

Cook The Shrimp

  • Put the shrimp into the same hot skillet. Cook them until they turn bright pink. This only takes a few minutes to do. Do not overcook the shrimp today at all. Overcooked shrimp can become very tough and rubbery.

Make The Sauce

  • Add a little cream to the skillet now. Stir in the cooked sausage and vegetables again. Let the sauce thicken up on low heat. Add a bit of butter for extra shine. This makes the sauce look very pretty.

Finish The Grits

  • Stir the cheese into the warm grits now. Add the heavy cream for more richness too. Make sure the cheese is fully melted now. Season with salt and pepper to your taste. The grits should look very thick and creamy.

Plate The Dish

  • Put a big scoop of grits in bowls. Top them with the shrimp and sauce. Garnish with green onions if you like them. Serve it while it is still very hot. Your meal is now ready to be enjoyed!
