Ingredients
  

  • 4 Large Jalapeño peppers
  • 1 Cup Vegetable oil
  • 3 Cloves Garlic
  • 1 Teaspoon Salt
  • 1 Tablespoon Lime juice
  • 1 Slice White onion

Instructions
 

Clean the Peppers

  • Start by washing your jalapeños in cold water. Remove any dirt from the green skin. Pat them dry with a clean towel. This keeps the sauce from being watery.

Slice the Vegetables

  • Cut the stems off the jalapeños first. Slice the peppers into thick round rings. Peel the skin off your garlic cloves. Cut the onion into a small wedge.

Load the Blender

  • Put the pepper slices into the blender jar. Add the garlic and the onion wedge. Pour in the fresh lime juice now. Sprinkle the salt over the top.

Start the Blending

  • Pulse the blender a few times first. This breaks the peppers into small bits. It should look like a thick paste. Do not add oil yet.

Emulsify the Sauce

  • Turn the blender on a low speed. Pour the oil in a very thin stream. This is the secret for creamy sauce. Watch the color turn light green.

Check the Thickness

  • The sauce should look like thick mayo. If it is too thick, add water. Add only one teaspoon at a time. Blend it for ten more seconds.

Taste and Adjust

  • Dip a small spoon into the sauce. Check if it needs more salt. You can also add more lime. Pulse it one last time to mix.
