Ingredients
  

  • 3 lbs Pork stomach
  • 1 cup White vinegar
  • 1/2 cup Fresh sofrito
  • 8 oz Tomato sauce
  • 2 tbsp Adobo seasoning
  • 1/2 cup Spanish olives
  • 4 cloves Minced garlic
  • 2 units Bay leaves
  • 1 tsp Black pepper
  • 6 cups Water

Instructions
 

Clean the Pork Stomach

  • First, you must wash the meat very well. Put the pork in a large bowl. Pour plenty of white vinegar over the meat. Rub the meat with your hands. Rinse it with cold water many times. This step is very important for flavor. It makes the meat taste very clean.

Boil the Meat

  • Place the cleaned meat into a large pot. Fill the pot with plenty of water. Add a little salt and some vinegar. Bring the water to a high boil. Then turn the heat down to medium. Let it cook for about two hours. The meat must be very soft.

Cut the Pork

  • Take the meat out of the hot water. Let it cool down for a few minutes. Use your sharp knife to cut it. Make small and bite-sized pieces. Small pieces soak up more of the sauce. Put the cut meat into a clean bowl. Set it aside for the next step.

Prepare the Sauce Base

  • Clean your big pot and put it back. Add a little oil to the bottom. Put your fresh sofrito into the warm oil. Stir it for two minutes until it smells. Add the garlic and the tomato sauce now. Mix them together until they are very bubbly.

Mix Everything Together

  • Add the cut pork pieces to the pot. Stir well to coat the meat in sauce. Pour in some fresh water or broth. Add the olives and the bay leaves now. Sprinkle the adobo and black pepper on top. Stir everything until it is mixed well.

Simmer the Stew

  • Turn the heat down to a low setting. Cover the pot with a tight lid. Let the stew simmer for thirty minutes. This lets the flavors meld together perfectly. The sauce will become thick and very rich. Check it often to make sure it cooks.

Taste and Serve

  • Taste the sauce before you stop cooking. Add more salt if you need it. Remove the bay leaves from the pot. Your delicious meal is now ready to eat. Serve it hot to your hungry family. They will love this amazing tropical dish.
