Ingredients

  • 1 cup dark brown sugar
  • 1/2 cup pineapple juice
  • 1/4 cup bourbon whiskey
  • 1/4 cup soy sauce
  • 2 tablespoons lemon juice
  • 1 teaspoon minced garlic
  • 1/2 teaspoon liquid smoke
  • 1/4 teaspoon onion powder
  • 1/8 teaspoon cayenne pepper

Instructions

Combine The Liquid Ingredients.

  • Start by grabbing your medium-sized saucepan. Pour the pineapple juice into the pan. Add the bourbon whiskey and soy sauce. Whisk these liquids together very gently. Make sure they are mixed well.

Add The Sweetener And Aromatics.

  • Pour the dark brown sugar into the liquid. Add the minced garlic to the pan. Squeeze in your fresh lemon juice now. Stir until the sugar starts to melt. The mixture will look very dark now.

Season The Sauce Mixture.

  • Add the onion powder to the saucepan. Sprinkle in the cayenne pepper for heat. Pour in the liquid smoke very carefully. Whisk everything one more time. Make sure there are no dry clumps.

Heat To A Gentle Boil.

  • Place the pan on the stove top. Turn the heat to a medium-high setting. Watch the sauce as it gets hot. Wait for small bubbles to appear. Let it reach a very gentle boil.

Simmer To Thicken The Sauce.

  • Turn the heat down to low immediately. Let the sauce simmer for twenty minutes. Do not cover the saucepan with a lid. The steam needs to escape the pan. This makes the sauce thick and rich.

Cool The Sauce Before Serving.

  • Turn off the heat after twenty minutes. Move the pan to a cool spot. Let the sauce sit for ten minutes. It will get much thicker as it cools. Now it is ready to eat.
