  • 2 cups Rice Flour
  • 1 cup Granulated Sugar
  • 1/2 cup Unsalted Butter
  • 2 Large Eggs
  • 1 tsp Ground Cinnamon
  • 1 tsp Baking Powder
  • 1/2 tsp Salt
  • 1 tsp Vanilla Extract

Instructions

Prepare Your Oven

  • First, turn on your oven. Set it to 350 degrees Fahrenheit. Let it get very hot. Line your tray with parchment paper. This helps the cookies bake evenly.

Mix Dry Ingredients

  • Get your large mixing bowl. Sift the rice flour into it. Add the sugar and baking powder. Put in the cinnamon and salt. Mix these dry parts very well. Use a whisk for this part.

Cream The Butter

  • Put the soft butter in a bowl. Add the sugar to the butter. Use your mixer on medium speed. Mix until it looks very fluffy. This should take three minutes. It should look very pale yellow.

Add The Eggs

  • Crack the eggs into the butter. Add the vanilla extract now too. Mix again until the eggs disappear. Do not mix it for too long. The mixture should look very creamy.

Combine Everything

  • Slowly add the dry flour mix. Do this in three small parts. Mix on low speed this time. Stop when the flour is gone. The dough will feel very soft. It might be a little bit sticky.

Shape The Cookies

  • Take a spoonful of dough. Roll it into a small ball. Place it on the baking tray. Leave space between each cookie ball. Press them down with a fork. This creates a pretty pattern.

Bake The Salpores

  • Put the tray in the oven. Bake for fifteen to twenty minutes. The edges should look light brown. Do not let them get dark. They will firm up as they cool.

Cool The Cookies

  • Take the tray out carefully. Let them sit for five minutes. Then move them to the rack. Let them cool down completely. They are best when totally cold.
